Grouper is one of my favorite fish to cook. It is a versatile fish that can be prepared in a variety of ways and pairs with many different flavor profiles. One grouper that I don't see very often is Snowy Grouper, but I always buy some when I have a chance. It’s not found in abundance like other grouper species. So, you can usually only get it fresh from local fishermen who know how to find it.
Snowy grouper has brilliant white meat. The flesh is lean, moist, and flaky with a sweetness that can be more like eating lobster. I will be preparing our snowy grouper grilled with a sesame orange ginger glaze. The flavors pair well with the flavor of the fish and allow the sweetness and texture to shine through. We paired it with an Asian sesame slaw to add a bit of crunch and contrast to the fish. It would go very well with a glass of white Bordeaux this evening.
