This weekend at 1830 Chophouse, we're serving something truly special—a Wagyu Sirloin from Voils Family Farms, grilled to perfection and served with a rich, velvety Bordelaise sauce.
At 1830, we take pride in sourcing the finest ingredients, and this cut is no exception. Raised in Indiana by the dedicated hands of the Voils family, this Wagyu delivers the buttery texture and intense marbling that food lovers crave. It's Indiana-raised beef at its absolute best and hand cut by our chef.
The sirloin will be prepared simply—grilled over open flame to enhance the natural richness of the Wagyu—and basted with our thyme garlic butter then paired with our house-made Bordelaise sauce, a classic French reduction made from red wine, beef stock, shallots, and herbs. The result? A luxurious and deeply savory dish that celebrates both technique and terroir.
