The wild salmon is here!

Wild Alaskan Salmon is one of the best fish to catch, cook, and eat that you can find anywhere. The fish grows in clean, cold waters and will have a high fat content that makes it perfect for many different cooking methods and adds to the wonderful mouthfeel and excellent flavor. The flavor is distinct to the river it was harvested from and is based on the diet of the fish prior to heading into fresh water to spawn. While many different rivers produce excellent fish, the Copper River is renowned for the flavor of it's salmon.

These salmon have a diet rich in shrimp which makes their meat a deep red color and adds a level of complexity to the flavor. It is also a high fat content fish that makes it creamy and rich on the palate. We will be offering Copper River Salmon for the next few weeks while they are available. Once the harvest numbers for the year are met, they will be gone.

We are beginning our feature of this fish with a simple Oscar style offering which will showcase the flavor. We will grill the salmon with our garlic thyme butter and top it with lump crab, asparagus, and hollandaise. Come try one before they are gone.
